Recipe Description
This cake is fashioned after the famous Bacardi rum cake. It has great flavor. For simplicity, I've baked it in a large loaf pan instead of a fluted pan.

Ingredients

3/4 Cup(c)  sugar
1/4 Pound(lb)  butter
3   eggs
1 Teaspoon(t)  baking soda
2 Tablespoon(T)  cornstarch
1 Teaspoon(t)  xanthan gum
1/2 Teaspoon(t)  salt
5 Tablespoon(T)  milk
3 Tablespoon(T)  rum
2 Teaspoon(t)  cider vinegar
2 Teaspoon(t)  baking powder

Preparation

Preheat the oven to 350°F. Grease a large loaf pan. In a large bowl, cream together the sugar and butter. Add the eggs. Mix until light, thick, and fluffy. Add the remaining ingredients. Beat until thick and creamy. (I like to use a whisk blade on my mixer, thereby incorporating as much air as possible.) Scrape down the edges once during the mixing process. Pour the batter into the prepared pan. Bake for 45 to 50 minutes, until a toothpick inserted in the middle tests cleanly.
