Recipe Description
Fresh salmon is a necessity for this elegant salad. Leftover salmon from the previous night's dinner is fine. Or, you can poach the fish just for this recipe. For a pretty presentation, place the salad on lettuce leaves and top with shredded carrots.

Ingredients

1 Pound(lb)  salmon, cooked
1 Tablespoon(T)  capers, drained
1/2 Teaspoon(t)  green peppercorns, lightly crushed
2   scallions, sliced
1 Cup(c)  peas, lightly cooked
1 Tablespoon(T)  fresh dill, minced
1 Tablespoon(T)  olive oil
2 Tablespoon(T)  lemon juice
5 1/2 Teaspoon(t)  white wine vinegar
1/4 Teaspoon(t)  kosher salt

Preparation

Break the salmon into large, bite sized flakes. Gently combine the fish with the capers, peppercorns, scallions, peas and dill. In a small bowl, whisk together the remaining ingredients. Pour over the salmon and toss.
