Recipe Description
When the cold weather months arrive, there is nothing better than sitting down to a hearty beef soup.  Sam's recipe is one of our favorites, just be sure to start it the day before, so the beef has plenty of time to marinate.

Ingredients

56 Ounce(oz)  whole tomatoes
2 Tablespoon(T)  parsley leaves, chopped
1 Pinch(pn)  pepper, to taste
1/2 Cup(c)  low sodium chicken broth
4 Quart(q)  water
2 Pound(lb)  lentils
1/3 Cup(c)  virgin olive oil
1 Clove(clv)  garlic, minced
2   large vidalia onions, chopped
4   ribs celery, diced
2   carrots, diced
1/3 Cup(c)  low sodium soy sauce
2 Pound(lb)  lean pot roast

Preparation

Chop the pot roast into 1 inch cubes.  Place in a bowl and marinate in soy sauce overnight in the refrigerator.  Saute the carrots, celery, onion, garlic and meat in the olive oil in a soup kettle.  Add the lentils, water, chicken broth and seasonings, and simmer for 1 1/2 to 2 hours.  Puree the whole tomatoes in a food processor and add to the soup mixture.  Serve hot.
