Recipe Description
By acting as a sort of culinary base, sauerkraut helps make a wide variety of salads. This recipe is seasoned with red wine and caraway seeds.

16 Ounce(oz)  sauerkraut
1 1/2 Cup(c)  red or white wine
2 Tablespoon(T)  vegetable oil
1   large onion, diced
1 Teaspoon(t)  caraway seeds
1/4 Teaspoon(t)  black pepper, freshly ground


Rinse and drain sauerkraut. Place in a medium saucepan. Add wine and cook, partially covered, over medium heat 20 minutes. Heat oil in a medium skillet. Add onion and saute over medium heat 5 minutes, or until tender. Add onion, caraway seeds and pepper to sauerkraut. Stir to combine. Cook sauerkraut mixture, uncovered, 10 to 12 minutes, or until most of the wine evaporates. Do not over cook. Sauerkraut should be moist, not dry. Cover and let cool to room temperature, or refrigerate and serve chilled.
