Sesame seeds add texture to this yeasty white bread. The bread makes for a lovely presentation at casual dinner parties.

2 Tablespoon(T)  sesame seeds, for sprinklingk
5 1/2 Ounce(oz)  sesame seeds, toasted
2 Teaspoon(t)  salt
7 Ounce(oz)  whole wheat flour
7 Ounce(oz)  plain flour
10 Ounce(oz)  lukewarm water
2 Teaspoon(t)  active dry yeast
2 Tablespoon(T)  milk, for glazing


Combine the yeast and 5 tablespoons of the water and leave to dissolve. Mix the flours and salt in a large bowl. Make a well in the center and pour in the yeast and water. With a wooden spoon, stir from the center, incorporating flour with each turn, to obtain a rough dough. Transfer to a lightly floured surface. To knead, push the dough away from you with the palm of your hand, then fold it towards you and push away again. Repeat until smooth and elastic, then return to the bowl and cover with a plastic bag. Leave the dough in a warm place for about 1 1/2 to 2 hours, until doubled in volume. Grease a 9 inch cake tin. Punch down the dough and knead in the sesame seeds. Divide the dough into 16 balls and place in the pan. Cover with a plastic bag and leave in a warm place until risen above the rim of the tin. Preheat a 425 degree F oven. Brush the loaf with milk and sprinkle with the sesame seeds. Bake for 15 minutes. Lower the heat to 375 degrees F and bake until the bottom sounds hollow when tapped, about 30 minutes more. Cool on a rack.
