A de-carbed version of this old time favorite. Sharyn remembers her granny's homemade bread, and this tastes just like it.

2 Cup(c)  soy milk
3 Tablespoon(T)  butter, melted
2 Tablespoon(T)  atkins bake mix
2 Tablespoon(T)  corn meal
1/2 Teaspoon(t)  salt
2 Teaspoon(t)  baking powder
4 Slice(sli)  stale low carb bread, crumbled
2   eggs, slightly beaten


Preheat oven to 425 degrees F. Grease an 8 inch cast iron skillet, or a baking pan of about the same size. Heat milk and butter together (do not boil). Sift together the dry ingredients. Stir in the heated milk and butter mixture, and pour it over crumbled bread. Stir in the egg. The mixture will be very soft. Pour into pan and bake until brown.
