Shredded Carrot And Yellow Turnip Salad With Cardamom Dressing

Yellow turnip, also know as rutabaga, is much sweeter and less sharp than its cousin, the whiteturnip.

Ingredients

1 Cup(c)  slivered almonds
1 1/2 Cup(c)  yellow turnip, coarsely shredded
1 1/2 Cup(c)  carrots, coarsely shredded
1 Cup(c)  apples, coarsely shredded
1 Tablespoon(T)  vegetable oil
1 Tablespoon(T)  fresh lemon juice
1 Tablespoon(T)  apple juice
1 1/2 Teaspoon(t)  honey
1 Teaspoon(t)  soy sauce
1/2 Teaspoon(t)  cardamom, ground

Preparation

Bake the almonds on a piece of aluminum foil in a 350° F oven for 10 minutes. Set aside. In a large bowl, combine the turnips, carrots and apples. In a small bowl, stir together the remaining ingredients, except the almonds. Pour the dressing over the salad and toss to combine. Add the almonds and toss again.
