Shrimp Bisque

This smooth and creamy bisque makes a delicious first course serving, or light main entree, when served with a crisp green salad.

Ingredients

1   large potato, peeled and chopped
2   ribs celery, chopped
1   large onion, chopped
2 Tablespoon(T)  tomato paste
1 Teaspoon(t)  thyme, dried
1/2 Teaspoon(t)  old bay seasoning
1/4 Teaspoon(t)  salt
28 Ounce(oz)  chicken broth
14 1/2 Can(cn)  tomatoes, diced
3/4 Pound(lb)  medium shrimp, shelled, deveined and halved lengthwise
2/3 Cup(c)  half and half
6 Tablespoon(T)  cooked bacon,crumbled
3   medium carrots, chopped

Preparation

In 3 1/2 or 4 quart slow cooker, combine carrots, potato, celery, onion, tomato paste, thyme, Old Bay seasoning and salt.  Stir in chicken broth and tomatoes with their juices.  Cover slow cooker.  Cook on low heat setting for 6 to 8 hours, or on high heat setting for 3 to 4 hours.  Cool slightly.  Transfer one quarter of the soup mixture to blender or food processor.  Cover and blend or process until smooth.  Repeat with the remaining soup mixture, one quarter at a time, until all of the soup is blended.  Return pureed soup to slow cooker.  Stir in shrimp and half and half.  Cover slow cooker.  Cook about 45 minutes, or until shrimp turn pink.  Sprinkle each serving with bacon or croutons.
