This is an great recipe to use when you need to whip together a quick cake for a special occasion or social event.

1 3/4 Cup(c)  confectioners' sugar
2 Tablespoon(T)  orange juice
2 Tablespoon(T)  butter, softened
3 Tablespoon(T)  milk
1/3 Cup(c)  margarine, melted
2 Teaspoon(t)  baking powder
1 1/2 Cup(c)  flour
1   large orange rind, grated
2   eggs
3/4 Cup(c)  sugar


To make dough: Place all the ingredients in a bowl. Beat for 5 minutes at medium speed. Pour into a greased and floured 9 by 4 inch loaf tin or 8 inch ring cake tin. Bake in moderate 350 degree F oven for 45 minutes. Cool slightly. Remove from the tin. To make icing: Mix the butter and the orange juice with confectioners' sugar. Spread on the cake.
