2 | Tablespoon(T) | butter | |
2 1/2 | Cup(c) | milk | |
1 | Pound(lb) | salted cod |
Preparation
Cut salted cod into medium-sized pieces. Cover with cold water and soak overnight. The next day discard the water, cover with milk and stew until tender (for about 30 minutes). Meanwhile, melt butter in a saucepan. Add chopped onion, cover and cook on a gentle heat until soft. Stir in flour and cook for 2 or 3 minutes, then whisk in milk, bit by bit. Season to taste, bring to a boil and simmer for a few more minutes. A little chopped parsley wouldn't do any harm. Drain the cod. Serve with the sauce.
Additional notes
Serve with freshly boiled potatoes for a traditional Cork Christmas Eve meal.
