Recipe Description
Salt cod and ling (also known as stock fish) are still on sale in Cork Market all year round and form the traditional Cork supper on Christmas Eve.

1   chopped parsley (optiona)
1   salt and freshly ground pepper
1 Tablespoon(T)  flour
1   onion, cbopped
2 Tablespoon(T)  butter
2 1/2 Cup(c)  milk
1 Pound(lb)  salted cod


Cut salted cod into medium-sized pieces. Cover with cold water and soak overnight. The next day discard the water, cover with milk and stew until tender (for about 30 minutes). Meanwhile, melt butter in a saucepan. Add chopped onion, cover and cook on a gentle heat until soft. Stir in flour and cook for 2 or 3 minutes, then whisk in milk, bit by bit. Season to taste, bring to a boil and simmer for a few more minutes. A little chopped parsley wouldn't do any harm. Drain the cod. Serve with the sauce.

Additional notes

Serve with freshly boiled potatoes for a traditional Cork Christmas Eve meal.
