| 2 | Tablespoon(T) | butter, softened | |
| 3/4 | Cup(c) | walnut pieces, finely chopped | |
| 1 | black pepper, freshly ground, to taste | ||
| 4 | sirloin steaks, each weighing 4 to 6 ounces, trimmed |
Preparation
Put the cheese in a bowl and mash with a fork. Add butter and walnuts and mix thoroughly. Season to taste with pepper. Preheat the broiler to high. Put the steaks on a broiler rack and season with plenty of pepper. Place under the broiler and cook for 1 to 2 minutes on each side for rare, 4 minutes on each side for medium, and 6 to 7 minutes on each side for well done. Remove the steaks from under the broiler and sprinkle with the cheese and nut mixture. Press down the mixture with a palette knife. Broil for 1 minute, or until the topping is melted and bubbling. Serve hot.
