Sirloin With Walnuts And Blue Cheese Crumbles

These steaks have a tasty, and unexpectedly crunchy, topping.  Simple accompaniments, such as boiled potatoes and a mixed salad, are all that are needed to complete this meal.

Ingredients

1 1/4 Cup(c)  stilton or other blue cheese, crumbled
2 Tablespoon(T)  butter, softened
3/4 Cup(c)  walnut pieces, finely chopped
1   black pepper, freshly ground, to taste
4   sirloin steaks, each weighing 4 to 6 ounces, trimmed

Preparation

Put the cheese in a bowl and mash with a fork.  Add butter and walnuts and mix thoroughly.  Season to taste with pepper.  Preheat the broiler to high.  Put the steaks on a broiler rack and season with plenty of pepper.  Place under the broiler and cook for 1 to 2 minutes on each side for rare, 4 minutes on each side for medium, and 6 to 7 minutes on each side for well done.  Remove the steaks from under the broiler and sprinkle with the cheese and nut mixture.  Press down the mixture with a palette knife.  Broil for 1 minute, or until the topping is melted and bubbling.  Serve hot.
