Smyrna Sausages In Tomato Sauce

Handmade lamb sausages are an unique Greek experience, especially when served with a zesty tomato sauce.  A perfect meal for noshing during the big game, or on a cold winter night.

Ingredients

1 Pinch(pn)  pepper, to taste
1   bay leaf
1 Tablespoon(T)  fresh flat leaf parsley, chopped
1/4 Teaspoon(t)  cumin, ground
1 Clove(clv)  garlic, crushed
1/4 Cup(c)  olive oil
1/4 Teaspoon(t)  sugar
1 Pound(lb)  tomatoes in juice, chopped
1/4 Cup(c)  olive oil
1   egg, beaten
1 Pinch(pn)  salt, to taste
1 Pinch(pn)  cinnamon, ground
1/4 Teaspoon(t)  cumin, ground
3 Tablespoon(T)  fresh flat leaf parsley, finely chopped
1 Clove(clv)  garlic, crushed
1   onion, chopped very finely
1 Cup(c)  fresh bread crumbs
1 Pound(lb)  lean lamb, finely ground

Preparation

To make the sausages:  Put the ground lamb, bread crumbs, onion, garlic, parsley, cumin, cinnamon, salt and pepper in a bowl and mix together.  Stir in the beaten egg, then knead the mixture for about 5 minutes, until it forms a paste.  Let chill in the refrigerator for about 1 hour.  Meanwhile, prepare the tomato sauce:  Put all the ingredients in a large pan (it needs to be large enough to hold the sausages in a single layer).  Bring to a boil, then simmer for about 30 minutes.  With dampened hands, form the lamb mixture into 12 equally sized sausage shapes, each about 3 1/2 inches long.  Heat the oil in a large skillet, add the sausages, and fry for 15 minutes, until browned on all sides.  Using a slotted spoon, transfer the sausages to the pan containing the tomato sauce and simmer for 10 to 15 minutes.  Serve hot.
