Recipe Description
An appealing and healthful combination of green summer vegetables, loaded with vitamins and minerals, blended together. It can be served hot or cold.

Ingredients

5 Cup(c)  chicken stock or broth
2 Cup(c)  fresh green beans, chopped
2 Cup(c)  lettuce leaves or spinach, chopped
2 Cup(c)  zucchini, chopped
2 Cup(c)  peas, fresh or frozen
1/2 Cup(c)  green onions, including some tender green tops, chopped
1 1/4 Cup(c)  parsley, chopped
1/2 Teaspoon(t)  salt
1 Pinch(pn)  pepper, freshly ground, to taste
3 Tablespoon(T)  creme fraiche or plain non fat yogurt, for topping

Preparation

In a saucepan over medium high heat, combine all ingredients except salt, pepper and topping. Bring to a boil. Reduce heat and simmer, partially covered, until vegetables are tender, about 15 minutes. Transfer to a blender or food processor in batches, about 1 cup at a time, and puree until smooth. Season with salt and pepper. Ladle into bowls and top with a dollop of creme fraiche or yogurt.
