6 Ounce(oz)  african rock lobster tails, 3 ounces each
1 Teaspoon(t)  salt, to taste
1   lemon, cut in wedges
1 Cup(c)  celery, diced in 1/4 inch pieces
1/2 Cup(c)  honeydew melon, cut in 1/2 inch cubes
1/2 Cup(c)  mayonnaise
1 Teaspoon(t)  curry powder
1 Teaspoon(t)  paprika
1 Teaspoon(t)  ginger, ground
3 Ounce(oz)  strip pimientoes, cut in strips
1/2   head lettuce


In a 4 quart saucepan cook lobster tails in warm water from tap. Simmer slowly for 5 minutes. Turn off the flame, and allow to stand in the water for 30 minutes. Cool and drain. Cut around the edge and underside of the shell, extracting meat in 1/2 inch pieces. Blend remaining ingredients together and replace mixture in the shells, piling it high. Arrange small beds of lettuce on 6 inch plates. Place a lobster on each lettuce bed with 1 lemon wedge at the side.
