Southern Pecan Catfish

Recipe Description
Bread the fish just prior to baking. Don't do it ahead of time or the coating will become soggy and will not crisp up in the oven.

1/3 Cup(c)  dry breadcrumbs
2/3 Cup(c)  cornflakes
1/2 Cup(c)  pecans
1 1/3 Pound(lb)  catfish fillets
3 Tablespoon(T)  dijon mustard
1/4 Cup(c)  nonfat milk


Preheat the oven to 425°F.

Coat a baking sheet with nonstick spray. Whisk together the milk and mustard and soak the fish in the mixture. Finely chop the pecans, cornflakes, and breadcrumbs in a processor or blender. Put on a dinner plate. Dip the fish, wet from the milk mixture, into the crumbs. Place fish onto the baking sheet. Spray very lightly with cooking spray. Bake for 8 to 10 minutes, until golden and firm.
