Recipe Description
A hearty chicken chili made with flavorful seasonings, white beans and chopped green chilies. Serve topped with shredded cheese and sour cream, with the tortilla chips on the side.

1/4 Cup(c)  vegetable oil
1/2 Cup(c)  onion, diced
1 1/3 Cup(c)  green bell peppers, diced
2 Tablespoon(T)  jalapeno pepper, diced
3 Tablespoon(T)  garlic, minced
4 1/2 Cup(c)  water
2 Teaspoon(t)  chicken bouillon powder
2 Teaspoon(t)  lime juice
2 Tablespoon(T)  sugar
3 Tablespoon(T)  cornstarch
3 Tablespoon(T)  cumin, ground
2 1/2 Tablespoon(T)  chili powder
4 Teaspoon(t)  paprika
4 Teaspoon(t)  basil, dried
2 Teaspoon(t)  fresh cilantro, minced
1 1/2 Teaspoon(t)  cayenne pepper
1/2 Teaspoon(t)  oregano, ground
1/2 Cup(c)  tomatillos, crushed
4 Ounce(oz)  green chiles, drained and diced
15 Ounce(oz)  navy or small white beans, rinsed and drained
15 Ounce(oz)  dark red kidney beans, rinsed and drained
3 Pound(lb)  cooked chicken breast, diced
2 Teaspoon(t)  chicken bouillon powder

Preparation

In a 5 quart (or larger) pot, heat the oil over medium heat. Add the onion and saute along with the green pepper, jalapeno and garlic. Cook until the vegetables are tender. In a large bowl, combine the water, chicken bouillon powder, lime juice, sugar, cornstarch, cumin, chili powder, paprika, basil, cilantro, cayenne pepper and oregano. Add to the vegetable mixture. Add the tomatillos and diced green chiles to the pot and bring to a boil. Add the navy beans and kidney beans, and chicken. Simmer for 10 minutes.
