Spicy Peanut Butter Crackers

These crackers are a great vegan treat that combines some spice with peanut butter. An unlikely pairing, but nonetheless tasty combination.

1/4 Cup(c)  soy milk
3 Tablespoon(T)  peanut butter
1 Teaspoon(t)  canola oil
1 Teaspoon(t)  hot chili oil
1/4 Cup(c)  brown rice flour
1/3 Cup(c)  white whole wheat flour
3 Tablespoon(T)  cornstarch
2 Tablespoon(T)  nutritional yeast
1/8 Teaspoon(t)  baking soda
1/8 Teaspoon(t)  fine sea salt
1 1/2 Teaspoon(t)  soy sauce


Preheat the oven to 350°F. Line two baking sheets with silicone baking mats. With an electric mixer, cream together the soy sauce, oils and peanut butter. In another bowl, whisk together the flours, cornstarch, nutritional yeast, baking soda and salt. Stir the dry ingredients into the wet, and add the milk a little at a time until a dough comes together. Roll out the dough between two pieces of silicon, to slightly greater than 1/8 inch thick. Cut out shapes with your favorite cutter about 1 to 2 inches in diameter. Repeat until you run out of dough, rolling it out again between each batch. Bake for 12 minutes, until the crackers are light brown on the bottom. Let cool on the baking sheets.
