Spinach, Almond And Orange Salad With Creamy Tarragon Dressing

10 Ounce(oz)  fresh spinach
2   seedless navel oranges
1/4   red onion, thinly sliced
1/2 Cup(c)  unblanched almonds, toasted and chopped
10 1/4 Ounce(oz)  silken soft tofu
2 Tablespoon(T)  light mayonnaise
1 Tablespoon(T)  white wine vinegar
2 Teaspoon(t)  tarragon, dried
2 Teaspoon(t)  granulated sugar
1 Teaspoon(t)  dijon mustard
1 Teaspoon(t)  salt
1/4 Teaspoon(t)  black pepper, freshly ground

Preparation

Trim spinach and tear into bite sized pieces. Using a sharp knife, cut away peel and white pith from oranges, then slice crosswise into thin circles. In a large salad bowl, combine spinach, orange slices and onion. To prepare the creamy tarragon dressing: Using a sieve, drain the tofu. In a blender or food processor, using pulsing motion, combine drained tofu, mayonnaise, vinegar, tarragon, sugar, mustard, salt and pepper until smooth. Toss salad with about half the dressing, or enough dressing to coat, and sprinkle with almonds.

Additional notes

Tip: For added calcium, substitute shredded calcium greens such as napa cabbage or kale for the spinach.
