Recipe Description
You can also use this recipe to make a delicious layer cake.  Fill it with raspberry jam and sprinkle it with confectioner's sugar for an everyday treat.  No matter how you choose to make this recipe, you will undoubtedly have created a scrumptious sponge!

Ingredients

3   eggs
1 Cup(c)  granulated sugar
1/3 Cup(c)  water
1 Teaspoon(t)  vanilla
1 Cup(c)  all purpose flour
1 Teaspoon(t)  baking powder
1/4 Teaspoon(t)  salt
1/2 Cup(c)  confectioners' sugar

Preparation

Preheat oven to 350°F.  Line the bottom of a 9 inch round cake pan with waxed paper.  In a medium bowl, using an electric mixer, beat eggs on high speed until light in color.  Gradually beat in sugar until thick and pale colored.  Beat in water and vanilla.  Sift flour, baking powder and salt over egg mixture.  Beat until combined.  Pour into prepared pan.  Bake for 25 to 30 minutes, or until golden brown.  Let stand for 10 minutes before inverting onto a wire rack and removing waxed paper.

Additional notes

Variation:  Jelly Roll:  Preheat oven to 375°F.  Line the bottom of a 15 by 10 inch jelly roll pan with waxed paper.  In a medium bowl, using an electric mixer, beat eggs on high speed until light in color.  Gradually beat in sugar until thick and pale colored.  Beat in water and vanilla.  Sift flour, baking powder and salt over egg mixture beat until combined.  Pour into prepared pan.  Bake for 15 to 20 minutes, or until golden brown.  Let stand for 10 minutes.  Sift confectioner's sugar over a clean tea towel.  Invert pan over towel.  Remove pan and gently remove waxed paper.  Roll up jelly roll along short end in tea towel.  Cool completely. Unroll and remove towel to fill.
