Recipe Description
A very colorful and attractive side dish.  Feel free to add a handful of shrimp to this recipe, if that is your preference.

1/2 Tablespoon(T)  olive oil
3/4 Pound(lb)  carrots, cut into matchstick pieces
1/2   medium red bell pepper, seeded and cut into matchstick pieces
1   medium anaheim chili, seeded and cut into matchstick pieces
1 Teaspoon(t)  fresh or dried rosemary leaves
1 Pinch(pn)  pepper, to taste


Heat oil in a 10 to 12 inch wok over medium high heat.  Add carrots and cook, stirring just until lightly browned, about 6 minutes.  Add bell pepper, chilies and rosemary.  Cook, stirring, until pepper pieces are limp, about 2 minutes.  Season to taste with pepper.
