Strawberry Orange Pie

This is a great summer combination of strawberries and oranges. Great after been chilled in advance super refreshing!

Ingredients

6 Tablespoon(T)  butter
1/4 Teaspoon(t)  salt
1 Cup(c)  all purpose flour plus 2 tablesppons
1   pie pastry (recipe follows); or purchased pastry shell for a single-crust 9-inch pie, baked and cooled
3 Tablespoon(T)  orangeflavored liqueur or 2 tablespoons thawed frozen orange juice concentrate
6 Tablespoon(T)  water
7 Cup(c)  strawberries, hulled
1 Teaspoon(t)  grated orange peel
3 Tablespoon(T)  cornstarch
3/4 Cup(c)  sugar

Preparation

 

 

Pie Crust.
Combine 1 cup plus 2 tablespoons all-purpose flour and 1/4 teaspoon salt.
Cut in 6 tablespoons solid vegetable shortening, butter, or margarine until mixture resembles coarse crumbs.
Sprinkle 2 to 3 tablespoons cold water over crumbs and stir until pastry holds together. Shape pastry into a ball.

 

 

On a lightly floured board, roll pastry out to a 12-inch round; place in  a 9-inch pie pan. Fold edges under to make pastry flush with pan rim; flute edges decoratively.

Prick pastry all over with a fork to prevent puffing. Bake in a 425 degree oven until golden about 12 minutes. Allow to cool

Filling

In a 1- to 1 1/2-quartpan, combine sugar, cornstarch, and orange peel.

In a blender or food processor, whirl 2 cups of the least perfect strawberries with water until smoothly pureed.

Stir puree into sugar mixture until blended. Bring to a boil, stirring often. Remove from heat; stir in liqueur.

Arrange remaining 4 to 5 cups strawberries, tips up, (or slice if strawberries are show quality) in baked pastry shell; evenly spoon hot berry glaze over whole berries, covering completely.

Refrigerate until glaze is cool and set (at least 1 hourl.If made ahead, cover and refrigerate until next day.
