1 Cup(c)  milk
2   eggs
1 Cup(c)  flour
1/2 Cup(c)  water
1 Pinch(pn)  salt, to taste
1 Cup(c)  cottage cheese, creamed
1/4 Cup(c)  sugar
1 Teaspoon(t)  vanilla
1 Tablespoon(T)  orange or lemon rind, grated
2 Tablespoon(T)  salad oil
1/2 Cup(c)  sour cream
1/3 Cup(c)  confectioners' sugar


Combine the batter in a mixer. Combine the stuffing in a blender. Heat a skillet 6 inches in diameter. Brush with oil. Pour in 1/4 cup of the batter and tilt the pan immediately so the batter will spread over entire bottom of the pan. Cook the pancake on both sides. Repeat until all pancakes are cooked, stacking them on a plate. Stuff each pancake and fold in four. Reheat in a hot 450 degree F oven. Serve with sour cream mixed with coniectioners' sugar.
