Super Chicken Pate

1/4 Teaspoon(t)  freshly ground black pepper
1/4   ground allspice
1/2   freshly grated nutmeg
2   eggs, lightly beaten
2   day old dinner rolls
1 Tablespoon(T)  unsmoked bacon, chopped
1 Tablespoon(T)  chicken livers
1   chicken, cut up
1 Teaspoon(t)  salt


Heat water and 1/2 teaspoon salt in a large deep skillet. Add chicken, livers, and bacon. Bring to a boil over medium-high heat. Cover with a tight-fitting lid, reduce heat to medium-low and simmer 1 hour or until chicken is tender. Remove chicken, livers, and bacon from cooking liquid; let cool. Reserve cooking liquid.

Preheat oven to 350F. Grease a 9 x 5-inch loaf pan. Remove bones and skin from chicken and discard. Break rolls into small pieces. Soak roll pieces in reserved cooking liquid until moistened; squeeze out excess liquid. Grind cooked chicken, livers, bacon, and soaked rolls into a large bowl. Grind resulting mixture a second time. Blend in eggs, 1/2 teaspoon salt, nutmeg, allspice, and pepper. Spoon chicken mixture into greased loaf pan; pat smooth. Bake, uncovered, 1 hour or until pate is firm.

Let pate cool in pan. Cover and refrigerate in loaf pan 48 hours. Turn pate out onto a platter.

Not big Pate Fan But....

I had this recipe at a Holiday party and loved it.. I was referred to this site to get recipe and made it myself and it came out GREAT.. WOuld reccomend highly.
