Super Easy Bechamel Sauce For Chicken Dishes

This lactose free version of bechamel sauce, has a velvety texture and rich flavor. The perfect complement to any chicken casserole, calling for a cream or bechamel sauce.

1 Pinch(pn)  black pepper, freshly ground, to taste
1 Pinch(pn)  salt, to taste
1 Cup(c)  lactose free milk, or fortified soy milk
1/4 Cup(c)  white wine
1 Cup(c)  chicken stock
1   bay leaf
2 Tablespoon(T)  vegetable oil
3 Tablespoon(T)  all purpose flour


In a medium saucepan, stir together flour and oil until smooth. Heat over medium high heat until bubbly, about 2 minutes. Remove from heat. Add bay leaf and gradually whisk in chicken stock. Return to medium heat and cook, stirring, for 4 to 5 minutes, or until thickened and smooth. Stir in wine. Cook for 1 minute. Gradually whisk in milk. Increase heat to medium high and cook, stirring, until thickened, about 5 minutes. Discard bay leaf. Season to taste with salt and pepper. Spoon into an airtight container and store in the refrigerator for up to 1 day.

Additional notes

Variation: Mushroom Cream Sauce: Cook 1 1/2 cups sliced mushrooms in vegetable oil over medium high heat until liquid is released, about 5 minutes. Sprinkle with 3 tablespoons of flour and stir until smooth. Continue as directed above.
