Recipe Description
Cooking in a slow cooker is the best! Toss in all your ingredients, turn on the heat, and go about your day. By nightfall, you have a fabulous meal and almost no dishes. Perfection in a pot!

Ingredients

1 1/2 Cup(c)  water
1 Pinch(pn)  pepper
1 Pinch(pn)  salt
4 Pound(lb)  pork loin roast
2 Cup(c)  heavy cream

Preparation

Place loin in slow cooker, fat side up and add about 1 1/2 inches of heavy cream to the bottom of the pot. Add about 1 1/2 cups of water, a liberal grinding of pepper, and salt to taste. Put on lid, set pot on low, and go out and have a life. (If you are home and can keep an eye on it, set lid ajar so that some evaporation takes place and turn the roast every once in a while. If all of the liquid evaporates, add more cream and water.) Figure on giving it 7 to 8 hours. Roast should be very tender when prodded with a fork after 6 to 8 hours of cooking. Remove roast and skim off fat if there is an abundance of it. Blend "gravy," with a whisk or hand blender. May be thickened with guar or xanthan, but that's not always necessary, depending upon how much evaporation has taken place. Slice roast, and pour creamy light brown gravy over meat.
