Recipe Description
This is actually an easy stir fry meal where all your favorite vegetables come into play. Everything is served on top of thin, crisp rice pancakes for a memorable meal.

15 1/2 Ounce(oz)  bamboo shoots, drained
2 1/2 Ounce(oz)  peanut or corn oil
4   scallions, sliced diagonally
6   eggs
31 77/100 Gram(g)  selection of vegetables, snow peas, onions, carrots, baby corn, mushrooms and broccoli
4 119/2000 Gram(g)  thin rice noodles
1 Cup(c)  sweet and sour sauce


Soak the noodles in enough lukewarm water to cover and let stand for 20 minutes, until softened. Alternatively, cook according to the directions on the package. Drain well and use scissors to cut into 3 inch pieces, then set aside. Meanwhile, prepare the vegetables as necessary and chop into equal size chunks. Beat the eggs in a large bowl, then stir in the noodles and scallions and season to taste with salt and pepper. Heat an 8 inch skillet over high heat. Add 1 tablespoon of the oil and swirl it around. Pour in one quarter of the egg mixture and tilt the skillet so it covers the bottom. Reduce the heat to medium and cook for 1 minute, or until the thin pancake is set. Flip it over and continue cooking until the pancake is set. Keep warm in a low oven while you make 3 more pancakes. Heat a wok or large skillet over high heat. Add the remaining oil and heat until it shimmers. Add the thickest vegetables, such as carrots, first and stir fry for 30 seconds. Gradually add the remaining vegetables and the bamboo shoots. Stir in the sauce and stir fry until all the vegetables are tender and the sauce is hot. Spoon the vegetables and sauce over the pancakes and serve.
