These easy to make little breads get a vitamin boost, and a nice golden color, from sweet potatoes.

1/2 Cup(c)  applesauce
2 1/2 Teaspoon(t)  baking powder, divided
1 Cup(c)  sweet potato puree
2 Tablespoon(T)  olive oil
3/8 Cup(c)  milk (dairy or soy)
3 Cup(c)  white whole wheat flour
1 Teaspoon(t)  baking soda
1/2 Teaspoon(t)  salt


Preheat oven to 425° F. In a large bowl, combine applesauce with 1/2 teaspoon baking powder. Add sweet potato, olive oil and milk. In a medium bowl, combine flour, 2 teaspoons baking powder, baking soda and salt. Slowly mix dry ingredients into wet. Drop batter onto greased cookie sheet. Bake 10 minutes.
