Recipe Description
Sweet potatoes are usually thought about during the holidays, but here is an elegant, everyday dish, perfect for a dinner for two. Serve along side grilled meat for a tasty pairing.

Ingredients

2 Cup(c)  hot riced (or mashed) sweet potatoes
4 Tablespoon(T)  butter
1/2 Cup(c)  sugar
1 Pinch(pn)  salt, to taste
1 Teaspoon(t)  nutmeg
1 1/2 Cup(c)  milk
4   eggs, separated

Preparation

Combine ingredients, adding beaten egg yolks to 1 1/2 cups of milk, potatoes and seasonings. Fold in stiffly beaten egg whites. (If potatoes are not hot, scald the milk.) Pour into buttered baking dish. Bake in a moderate 350° F oven for 1 hour, or until a knife comes out clean.
