Recipe Description
Baked in a hot oven, these sweet potato spears become perfectly crisp on the outside, while the insides remain tender and flavorful.  Always a hit at parties, barbecues, and definitely popular with the kids.

1/8 Teaspoon(t)  pepper, freshly ground
1/4 Teaspoon(t)  kosher salt
5 1/2 Tablespoon(T)  vegetable oil
2 Pound(lb)  medium sweet potatoes, peeled

Preparation

Preheat the oven to 425° F.  Cut the sweet potatoes into pickle sized spears.  If the potatoes are especially large around, cut the thickest spears in half lengthwise so they look like steak fries, about 1/2 inch thick.  Toss the spears with the oil, salt, and pepper until well coated.  Place the spears in one layer on a baking sheet.  Bake for 40 minutes.  While baking, turn them over with a metal spatula several times to prevent them from sticking to the pan and to ensure that they brown on all sides.
