Recipe Description
These pancakes are so nutty, sweet, and fruity that the only accompaniment needed is a little maple syrup, or perhaps a dollop of yogurt.

1 1/2 Cup(c)  unbleached, all-purpose white flour
1 Teaspoon(t)  baking powder
1 Teaspoon(t)  baking soda
1/2 Teaspoon(t)  salt
1 1/4 Cup(c)  orange juice
1/4 Cup(c)  sweetened condensed nonfat milk
1 1/2 Teaspoon(t)  minced orange zest
1/3 Cup(c)  chopped nuts, such as pecans
1   egg white
1   egg


Sift together the flour, leaveners, and salt.
In a separate bowl, whisk together the egg, egg white, orange juice, and milk.
Four the liquid ingredients into the dry. Stir until the batter is moist but still lumpy.
Gently stir in the zest and nuts.
Preheat a skillet or griddle and spray with a nonstick spray or brush lightly with oil. Pour 1/4 cup of batter per pancake onto the pan, making sure the pancakes don't touch, and cook until bubbles start to burst on the surface. Turn
and cook until golden.
