Recipe Description
Tempura shrimp make a delicious appetizer.  Whenever I have served these at a party, they have been the first to disappear.

3/4 Quart(q)  expeller pressed canola oil to deep fry
8   large nonbrined, unsalted shrimp
1/2 Cup(c)  white rice flour
1/2 Cup(c)  white, unbleached all purpose flour
1/3 Cup(c)  cold low sodium water
1   egg


Whisk the egg and water together.  Combine the flours and stir only until mixed.  Do not overmix or it will become lumpy.  Set aside.  Clean, shell, and devein the shrimp but leave on the tail.  Set aside.  Prepare the oil. To deep fry with an electric deep fat fryer, follow manufacturer's instructions for oil quantity needed.  Bring the oil up to the recommended temperature.  Dip the shrimp into the batter a few at a time, cook 3 minutes until golden brown.  Remove and drain on paper towels.  Serve hot.
