These wonderfully light and airy cookies are perfect for serving after a heavier meal. They also make a great offering at a more formal afternoon tea, or simply a fun snack for the kids.

Ingredients

1 1883/2000 Gram(g)  rolled oats
2   egg whites
1/3 Teaspoon(t)  salt
2 Teaspoon(t)  cornflour
6 1/1000 Gram(g)  caster sugar

Preparation

Preheat a 275 degrees F.  Spread the oats on a baking sheet and toast in the oven until golden, about 10 minutes. Lower the heat to 250 degrees F. Grease and flour a baking sheet. With an electric mixer, beat the egg whites and salt until they start to form soft peaks. Sift over the cornflour and continue beating until the whites hold stiff peaks. Add half the sugar and whisk until glossy. Add the remaining sugar and fold in, then fold in the oats. Gently spoon the mixture onto the prepared sheet and bake for 2 hours. When done, turn off the oven. Lift the meringues from the sheet, turn over, and set in another place on the sheet to prevent sticking. Leave in the oven as it cools down.
