Longing for that meaty red lasagna you grew up on? Full of ricotta cheese and red sauce oozing with ground sausage? This version is much easier on the waistline, but certainly not short on flavor.

Ingredients

2 Tablespoon(T)  ground cashews or walnuts
2 Tablespoon(T)  nutritional yeast
1   tofu ricotta
12   lasagne noodles, prepared according to package directions
1   meaty marinara

Preparation

Preheat the oven to 375

A quick note before assembling the lasagna: be sure to keep some sauce and ricotta to apply on the very top of the lasagna. You will have 4 layers of pasta in all, 50 divide each ingredient accordingly.

In a square 8-inch (20-cm) or 9-inch (23-cm) baking dish, place a thin layer of sauce, add 3 noodles in a single layer. add another layer of sauce, then a layer of Tofu Ricotta and another layer of noodles, and repeat until you run out of ingredients, ending with a layer of ricotta and sauce. Sprinkle with the nutritional yeast and cashews.

Bake, uncovered, for 30 to 40 minutes, or until the top is beginning to brown and your noodles are nice and tender.

Let stand for at least 15 minutes before serving, so that the portions don't fall apart when cut.
