Recipe Description
Use pimiento-stuffed Spanish olives, imported black olives, or some of each. Refrigerate until ready to serve.

Ingredients

4   hard-cooked eggs
1 Tablespoon(T)  mayonnaise
1 Tablespoon(T)  dijon mustard
5   large olives, chopped optional
   salt and freshly ground pepper
1 Tablespoon(T)  finely chopped parsley or cilantro for garnish

Preparation

Cut cooked eggs in half.

Carefully remove yolks and place in a small bowl.

Mash yolks with a fork and combine with mayonnaise, mustard, chopped olives, salt and pepper.

Divide filling among eggs.

Sprinkle with parsley.
