Ingredients

1 Teaspoon(t)  herb salt
1 Tablespoon(T)  olive oil
2 Pound(lb)  boneless veal steaks, thinly sliced
1 Pinch(pn)  black pepper, freshly ground, to taste
4   lemon wedges
2 Tablespoon(T)  fresh parsley, chopped

Preparation

Pound the veal with a flat meat mallet until it is about 1/4 inch thick.  Rub meat on both sides with herb salt and pepper, and then brush with oil.  Preheat a heavy frying pan until it is hot, then place the meat in it.  Sear the meat for about 1 minute on each side, testing for doneness by cutting into the center of a slice with a knife.  Cook until done the way you like it.  Remove the meat to a warmed serving plate, sprinkle it with parsley, and serve with the lemon wedges.
