12 Ounce(oz)  oatmeal stout beer
2 Tablespoon(T)  canola oil
1 1/2 Teaspoon(t)  fine sea salt
1 Tablespoon(T)  baking powder
1 Tablespoon(T)  raw sugar
1 Tablespoon(T)  vital wheat gluten flour
1/2 Cup(c)  quick cooking oats, finely ground
1/2 Cup(c)  light spelt flour
1 Cup(c)  white whole wheat or regular whole wheat flour
1 Cup(c)  bread flour
2 Teaspoon(t)  caraway seeds (optional)


Preheat the oven to 375°F (190°C, or gas mark 5). Lightly coat an 8 x 4-inch (20 x 10-cm) loaf pan with spray. In a large-size bowl, whisk together the flours, oats, wheat gluten, sugar, baking powder, and salt. Add the oil and stir with a fork. Fold in the beer, being careful not to overmix. The dough will be sticky and rather thick, but if it's really impossible to manage, add a few tablespoons of water or extra beer. Place the batter in the prepared pan. Sprinkle the top with the caraway seeds, if desired. Bake for 50 to 55 minutes, or until a toothpick inserted into the center comes out clean. Place on a wire rack, still in the pan, for about 15 minutes before transferring directly to the rack, and let cool completely before slicing or storing.
