Recipe Description
Cooking time for these Italian-style specialties is only 32 minutes, but it takes an additional 25 minutes for the dough to rise before use.  Enjoy them either piping hot, or at room temperature.

Ingredients

10 Ounce(oz)  frozen chopped broccoli, unthawed
1 Pound(lb)  frozen bread dough, thawed
1   large egg
1/4 Cup(c)  parmesan cheese, grated
3/4 Cup(c)  mozzarella cheese, shredded
1 Tablespoon(T)  olive oil
1 Cup(c)  part skim ricotta cheese
2 Tablespoon(T)  water
1 Teaspoon(t)  dried basil, crumbled
1 Clove(clv)  garlic, minced
1/2   small sweet red pepper, cored, seeded and coarsely chopped
1   medium yellow onion, coarsely chopped

Preparation

Heat the oil in a 10 inch skillet.  Add the onion, pepper and garlic, and  saute for 4 minutes or until almost soft.  Add the broccoli and water, cover, and cook until the broccoli is tender, about 8 minutes.  Remove from heat and mix in the ricotta, mozzarella, 3 tablespoons of the Parmesan cheese and the egg.  Set aside.  Divide the dough into fourths.  Roll 1 portion on a lightly floured surface into a 10 by 7 inch oval, then spoon a scant 3/4 cup of the Parmesan,  broccoli filling down the center leaving a 1 inch margin at each end.  Fold the dough over lengthwise to enclose the filling and pinch the edges to seal.  Transfer to a baking sheet lined with foil.  Roll, and fold the remaining calzones.  Redo the same way, and add to the baking sheet.  Cover with a clean cloth and let rise in a warm, dry, draft-free spot for 25 minutes.  Meanwhile preheat the oven to 400 degrees F.  Brush the calzones lightly with water and sprinkle with the remaining Parmesan.  Bake, uncovered, for 18 to 20 minutes.
