This is a traditional Vietnamese soup that is served for all occasions. Great soup with a lot of flavor .

1 Bunch(bn)  watercress washed and trimmed
1 Tablespoon(T)  salt
1 Tablespoon(T)  sugar
2 Tablespoon(T)  fish sauce
8   scallions halved and bruised cut length wise
1 Quart(q)  boiling fish stock
1   lemongrass stalk halved length wise
3 Clove(clv)  minced garlic
2 Tablespoon(T)  corn oil
1   fresh ginger 1 inch
12   uncooked shrimp peeled


Heat the oil in a wok, add ginger, garlic and lemongrass, stir fry for about two minutes.

After two minutes transfer ingredients to bowl of fish stock. Add the scallions to the wok and stir fry for two minutes.

Add the shrimp and stir fry until they become white. Add fish sauce, sugar, and salt, strain in the fish stock and return to a boil.

Divide the scallions and shrimp between four deep soup bowls, then ladel in the stock. Add large handful of watercress and serve immediately.

Additional notes

unable to find fish sauce use salt to taste as substitute.
