White Lasagna With Butternut Squash Hummus

Ingredients

1/4 Teaspoon(t)  black pepper, to taste
1   nutty cheese
1   curried butternut squash hummus
8   lasagne noodles, prepared according to package directions
2 Cup(c)  soy creamer or unsweetened nondairy milk
2 Tablespoon(T)  nondairy butter
1/4 Cup(c)  light spelt flour
1/2 Teaspoon(t)  fine sea salt
1/8 Teaspoon(t)  paprika
1/4 Teaspoon(t)  ground nutmeg
1 Clove(clv)  garlic, grated

Preparation

To make the bechamel:

In a medium-size saucepan over medium heat, cook the butter and garlic for 1 minute, until fragrant.

Add the nutmeg, paprika, salt, and pepper. Cook for 1 minute. Stir in the flour and cook for a few seconds. Whisk in the soy creamer. Cook and whisk until thickened. Set aside.

Preheat the oven to 375°F.

A quick note before assembling the lasagna: be sure to keep some bechamel to apply on the very top of the lasagna. You will have 4 layers of pasta in all, so divide each ingredient accordingly.

Place a little bechamel on the bottom of an 8-inch (20-cm) square baking dish. T

Top with 2 lasagne noodles, a layer of hummus, and a layer of Nutty Cheese, and repeat until you run out of ingredients, ending with a layer of bechamel.

Cover with a piece of foil. Bake for 20 minutes.

Remove the foil, and bake for another 15 minutes, or until golden brown on top.

Let stand for at least 20 minutes before serving, so that the portions don't fall apart when cut.
