Whole Wheat Walnut Muffins

1/4 Cup(c)  butter, cut up
1 Cup(c)  brown sugar, packed
1   large egg
1 1/4 Cup(c)  milk
1 Teaspoon(t)  vanilla extract
2 Cup(c)  whole wheat flour
1 Teaspoon(t)  baking powder
1/4 Teaspoon(t)  salt
3/4 Cup(c)  walnuts, chopped
1 Tablespoon(T)  granulated sugar


Preheat oven to 425° F. In a large bowl, using an electric mixer, beat butter and sugar until well mixed. Add egg, milk and vanilla, and blend. Add flour, baking powder, salt and nuts and mix until moistened. Spoon batter into paper lined muffin tins, filling them about three fourths full. Sprinkle with sugar. Bake until a toothpick inserted in the center comes out clean, about 15 minutes. Remove from pan and cool on a rack for 5 minutes. Serve warm.
