Wine Walnut Cake

Cake we eat after dinner on Passover. Goes great with coffee!

1 Cup(c)  walnuts, finely chopped
1 Pinch(pn)  salt
8   eggs
2 Cup(c)  sugar
1   lemon, zested
4 Ounce(oz)  sweet red wine
1   orange juice
1 Cup(c)  matzah cake flour


Preheat oven to 325° F.

Separate eggs into two bowls. Beat yolks. Add 1 cup sugar. Beat again. Set aside.

Beat whites until stiff, adding 1 cup sugar when whites are almost stiff.

Add orange juice, lemon rind and wine to yolks and beat again. Add yolks to whites very slowly.

Add salt, flour, and nuts. Fold mixture gently until whites are not seen.

Pour into an ungreased tube pan.

Bake in 325°F oven 55 minutes to 1 hour or until a toothpick inserted into the center comes out clean.

Turn over baked cake pan to cool on the prongs of the cake pan or over the neck of a bottle.

Really liked the recipe the flavors came together .. I am real lemon person might of added a little more next time.
