Recipe Description
I've taken this classic foamy sauce and paired it with Grand Marnier.  This is a lovely special occasion dessert sauce for guests who cannot have dairy.  Serve over fresh berries in wine glasses for an elegant presentation.

Ingredients

4   egg yolks
3 Tablespoon(T)  water
2 Tablespoon(T)  grand marnier
1/4 Cup(c)  sugar

Preparation

In a medium sized metal bowl, combine the egg yolks and sugar.  Beat until thick and pale.  Place the bowl over a saucepan of simmering water.  The bowl should not touch the water.  Blend on high speed with a hand held mixer until the mixture becomes soft and foamy, about 4 minutes.  Serve 1/4 to 1/3 cup of sauce over each serving of fresh berries.  Serve this sauce within 30 minutes of making, for best volume.

Additional notes

Quite a few liqueurs are gluten free.  You must be cautious of "flavored" liqueurs and should confirm with the manufacturer if they are gluten free.  Kahlua, Grand Marnier, Creme de Menthe, and numerous others are safe as of this writing.
