Ingredients

1/4 Teaspoon(t)  black pepper
1/4 Teaspoon(t)  nutmeg
1 1/2 Teaspoon(t)  dry mustard
3/4 Teaspoon(t)  celery seed
1/2 Teaspoon(t)  turmeric
2 Tablespoon(T)  cornstarch
3 Cup(c)  sugar
1 1/4 Cup(c)  vinegar
2 1/2 Tablespoon(T)  salt
1   green pepper
1   red pepper
2 Cup(c)  onions
6 Cup(c)  zucchini, unpeeled

Preparation

Grind zucchini, onions and peppers. Mix vegetables with salt and let stand overnight. Rinse with cold water and drain well. Combine remaining ingredients in a heavy saucepan and cook until slightly thickened. Add vegetable mixture. Cook over low heat for 30 minutes, stirring occasionally. Put into jars and seal.

Additional notes

Variation: Substitute cucumbers in place of zucchini.
