Recipe Description
This is one of my favorite recipes, a meatless main dish that is both healthy and delicious. It's also versatile enough to be served as a side dish, if you have meat lovers in your party crowd.

Ingredients

1 Dash(ds)  nutmeg, grated
1 Dash(ds)  paprika
1 Dash(ds)  pepper
1 Dash(ds)  salt substitute
1/4 Cup(c)  low fat cheddar cheese, shredded
1 Pound(lb)  fat free ricotta cheese
3/4 Cup(c)  egg substitute
3 Tablespoon(T)  all purpose flour
1 Tablespoon(T)  low fat margarine
1/2 Pound(lb)  zucchini, chopped
1   small onion, diced

Preparation

Preheat oven to 350° F. Saute the onion and zucchini in margarine in a skillet. Stir in flour. Add the salt substitute, pepper and paprika. Remove from the heat, add the remaining ingredients, and mix well. Bake in a 1 1/2 quart casserole dish coated with nonstick spray for 35 to 40 minutes.
